Its not as bad as it sounds. I slept in today, got up at 10:00 had a phone call, at 10:30 my wife wanted me to go to breakfast with her so we did, I mentioned this new Mongolian Stir Fry Place that opened, she said she would rather that, I was eating by 11:15. So while I didn't get my 30 grams of protein within 30 mins of waking up, I really just started tracking at lunch today.
Swai should be light and flaky. Try heating small amount olive oil in a saucepan with lemon juice, cilantro, garlic, salt, and black pepper ; simmer sauce for 2 minutes. Spoon sauce over fish filets. Sprinkle filets with paprika and lemon zest. Bake in the preheated oven until fish flakes easily with a fork, 10 to 12 minutes, no longer than that. I like to make parchment paper pouches for each filet- easy clean up and keeps fish moist. Maybe you are baking it too long?
