i boil a frozen bag of cauliflower until tender. drain any remaining water and smash with a potato masher. then i add shredded cheddar cheese, a little milk, and seasoning. It is so good, just like mashed potatoes. You could add a little sour cream and butter if you wanted to.

I steam a large head of cauliflower and add 3-4 tbsp cream cheese and 1 oz fresh grated parmessan cheese.  I use my emersion blender because it gets it smoother.  I also add salt & pepper to taste and roasted garlic

Eek, strayed off my scheduled food last night. Still ate pretty decently, but will stick to my designated menu today. 

B: Chike iced coffee protein shake w/ 8 oz. unsweetened vanilla almond milk, water and SF hazelnut Torani

L: Starkist Tuna Creations in the sweet and spicy flavor

S: Pure Protein bar, later a Starbucks tall skinny peppermint mocha

D: Roasted chicken breast (2.5 oz.) with a steamed veggie

S: Quest cookie dough protein bar

Also maybe some fresh veggies in there somewhere, have had a wicked craving for a fresh tomato or cucumber. That's 860 calories total, not including any extra veggies I might have, and 106 grams of protein. 

Liquids: Eh.

Vits: Will take later. 

Exercise: Nada.

Summer, I know what you mean about the cucumber and tomato. I craved them last night. Stopped at Publix and got the most beautiful baby butter lettuce, so tender and sweet and precious, vine ripe tomatoes, cuke and green onions. I made small side salad last night with homemade lemon vinaigrette dressing and made another for lunch today. Eating it now. It is so fresh and amazing. I am delighted that I am tempted by this kind of thing and not something else, you know the possiblities.

Squeeze fresh lemon juice. Add chopped tarragon or fave fresh herb. Dijon mustard. Whisk in olive oil slowly. I usually like a 2:1 acid to olive oil. Salt and pepper to taste. It beats any bottled dressing hands down IMO. Enjoy!
