Also have you thought of making cheese crisps?

GG Bran Crispbread. I use it almost daily. It's pretty much the only grain based thing I eat regularly anymore.. On it's own- blah, but as a base for cheese, spreads or tuna/egg salad- it works. It's a good amount of fiber.. so don't think it's going to taste great on it's own, but it does what I need it to (crunch & roughage!)

I usually eat only one at a sitting even now, and early out- one was ALL I could eat! They are fairly large too- 2" x 3" ish?
