The "bread pudding" was pretty tasty. I didn't know what to expect because I never had eggplant before but it was pretty close to the texture of bread pudding. It's also very filling.
I am loving this chick and her recipes =)
I may give that a try. I really love bread pudding. I am not a big fan of egg plant but might suck it up for a bread substitute that works for bread pudding. I'll check out her recipes.
I was misbehaved yesterday and had a couple bites of my wife's home made mac and cheese. It was sitting on the stove all day just begging to be eaten. I didn't eat as much as I would have liked and before I could have eaten half a pan. I had to put it away to get it out of my sight. Fortunately the scale did not go up today, it didn't go down, but it didn't go up.
Having a crap day so at the moment it feels just like I have 100 more to go. On Saturday when I hit it it was like winning the lottery. You couldn't have chiseled the smile off of my face. Yeah I guess I have had a lot of NSV's lately just kind of take them in stride now. I mean lots of people tell me how great I look all the time, my blood sugar hasn't been over 90 in 3 months, the clothes I bought one size too small a month ago are starting to get loose, I can do 60 minutes of cardio, so yeah, lots of good stuff. I honestly do not remember the last time I weighed 283. So I am kinda in uncharted territory now. I think I am hitting a stall though, it just sort of feels like it so I gotta change things up this week to see if I can shorten it, my stalls have been pretty long lately.
