It's Sunday and you know what that means?  I'm in the kitchen cooking for my menu for the week, whi*****ludes Cabbage rolls and Cream Cheese Pumpkin Muffins check out the recipe.  My muffin tins are smaller so I ended up with 12 muffins.  I liked no I LOVED having a low carb dessert last week and have NO doubt it helped me to not go off on a donut/cookie binge.  So here's to another week on track!!

Sooo the "french toast" was pretty darn tasty and since I had egg plant left over I made the "Bread Pudding" as well.  I'm currently debating using some of the pumpkin (since I bought the big can) to make Pumpkin Soup.

B:  Greek Yogurt; Pineapple Tidbits
S:  Coffee; Cream Cheese Muffin
L:  Eggplant "French Toast"
S:  Melt in your mouth baked chicken (I added some crushed dried onions to it)
D:  ??

Water:  Goal 12 cups
Vitamins:  On Track
Exercise:  170 crunches; 75 squats

Glad to see you posting lady!!! Im having quite an emotional morning so I'm planning on heading to the ggym to work off some of this...

B: chicken sausage, scrambled egg whites with lots of veggies 

s: nada

l: chike protein iced coffee shake

S: protein pancakes

D: Grilled chicken salad

Not sure if I will run or spin, but one of the two.

1:   8 oz unsweetened almond milk, 1 scoup Unjury Chocolate Splendor.  I needed nutrition on the run (which wouldn't fight back LOL) for another busy morning, so I was reminded of how SWEET protein shakes can be!   :-o

2:   2 Sargento RF string cheese sticks

3:   3 oz 98% FF deli turkey, 1 wedge LC RF cheese

4:   3 oz spiral-sliced ham, 1 wedge LC RF cheese, 1/4 c green beans, 5 sprays ICBINB

Are the ground almonds in the recipe used as like a binder? ie: flour/pancake mix? Could I substitute those almonds?

You "could" if you wanted to.  It's not my recipe but I use almond flour and/or coconut flour in my low carb recipes.  Do you have an allergy?

Yes, nuts are a no-no in my house. I have issues but my son is deathly allergic as well. :(

Here's blog about converting almond flour to coconut flour http://mariahealth.blogspot.com/2011/10/mocha-fudge-cake-and -converting-flours.html based on reading this if you use coconut then double the eggs =)

Holy ****

Eggplant French toast.  Please, please reviews.  what does it resemble?  Oh my God.  And what do you do if you're just cooking for yourself?  Do you have to use all the eggplant?  Lord the possibilities.

I liked it...it was my FIRST time ever having egg plant so I wasn't sure what to expect.  But I enjoyed it.  Just a little spongy but totally wasn't GROSS.  I also made the "bread pudding" recipe since I had a large egg plant.  I only cook for me, so I usually make my breakfast/lunch/dinner sometimes for the WEEK.  Check out the blog I linked.  She also I think did some egg plan cheese toast and a bunch of recipes just do a search and you'll find out =)
