I spent all morning trying to think of any reason why I couldnt eat if for breakfast, lunch, dinner and snack, and then decided I didnt want to skip my morning chike or let my meatloaf go to waste lol.

Gawd, I  meatloaf but haven't eaten it in for-ever.  I need to make me some meatloaf!!!!

I made it for the first time yesterday - I put it in  cupcake pans, and each loaf came out to like 95 calories or something. Pretty tasty too but Ill be playing around with different recipes :)

Sometimes I make stuff like meatloaf in a wonton wrapper shell (20 cals).  Lots of combos in that form.

I love the idea of a meatloaf cupcake.  I think I am going to investigate this possibility further.... If you find a recipe you really like, please share.
