Need ideas for breakfast...no EGGS please.

In hot weather . . .a protein shake.  In cold weather. . . . chocolate protein powder in warm/ho****er for hot protein cocoa.

I was a carb lover, too- French toast, waffles.  *nostalgic sigh*  Lately, I've been cooking up a mess of steel cut oats (not oatmeal) in milk.  It's very satisfying, with a great nutty/chewy texture.  If I add a couple of cardamom pods to it, it tastes like kheer (Indian rice pudding), or just sprinkle some cinnamon on it.  I throw the leftovers in the fridge and eat it cold, or thin it with more milk and nuke it.  Non-nutritive sweeteners don't do well with heat, so I stir in some with each serving.

I love the suggestions listed above.  Might have to try the grilled ham and swiss trick.

My Fred doesn't much like naked eggs either. He's just fine with egg puff or a custard, but really hates facing a naked egg...

Be aware - I eat moderate carb and the bread I use has 70 calories, 6 grams of protein and 3 of fibre per slice.

On to something useful - what to eat for Breakie:
Single slice of PB toast & protein coffee
Single slice of toast topped with cheese
Single slice French toast topped with sf jam (1 slice bread, 1 egg, 1tbsp milk, 1 packet Splenda)
Egg puff (1 egg, 1/2c milk, 1oz tasty cheese, 1 slice bread. Whiz in blender, pour into small casserole and bake at 350 until puffed and set. I can eat 1/2)
Pumpkin custard (follow directions on can of pumpkin but use Splenda instead of sugar.
Oatmeal with whey powder mixed in
Hi Lo high fibre, high protein cereal
Cottage cheese with green onions, salt and pepper mixed in
Cut up apple, nuked, topped with cottage cheese, Splenda and cinnamon
Cheese quesadilla made with a 6" whole grain tortilla
All Bran and protein coffee
Sliced apple with Greek yogurt/PB dip (can use PB2)
Homemade flax muffin (6 eggs, 3 tsp baking powder, 3 tsp cinnamon, 1.5 cups flax meal, 6 packets Splenda. Makes 12 muffins) and protein coffee

The flax muffin makes excellent "cereal" if you crumble it into a bowl and add hot or cold milk.

Fiber one cereal with a low calorie milk (almond, flax... 25 calores in 8 ounces).  Tastes great and only a 100 calories or so.  Not much protein, but packs a great fiber whallop.

Try a One Minute Muffin.

 

 

Chocolate muffin in a minute. Really!
Ingredients: 1/4 cup golden flax meal, 1/2 teaspoon baking powder, 1-2 tablespoons unsweetened cocoa powder, 1 packet truvia (or equiv splenda), few drops vanilla stevia syrup to taste (or 1 teaspoon sugar free vanilla syrup, ie; torani, Da Vinci), 1 oz. Neufchâtel cream cheese; softened, 1 large egg, 1 teaspoon heavy cream
How To Prepare: In a large coffee mug, mix egg, syrup and softened cream cheese until combined. Add dry ingredients and mix well. Add cream until rich and creamy. Scrape down sides and microwave for 1 minute 20 seconds until springy and almost all the way set. Invert and slice into 4 (or 2 for cupcakes). Top with whipped cream, cream cheese or frosting for cupcakes, makes 2 lg. cupcakes.
Number of Servings: Serves 2-4

Preparation Time: one minute prep, one minute cook time

These were all great suggestions, only I'm not allowed to have any type of grains at this stage. I will definitely save this thread for future reference. Thanks a bunch, you guys ROCK!
