Anyone Cook with a Pressure Cooker?
I treated myself to a pressure cooker last week, so I've been experimenting. What sent me over the edge (as far as shelling out the dough!) was a lamb tagine I had at a restaurant. My practical self said a tagine (the cooker) was not something I'd use enough to warrant a purchase, but I've wanted a pressure cooker for a while! I like to make bread and butter pickles (this year's will be with splenda!), and I thought this would be a good way to make sure meats stayed moist.
If anyone has any ideas to share or favorite pressure cooker recipes, let me know. I'm out Googling lamb tagines now!

this chick has some fantastic tagine recipes, they are for slow cooker or tagine but would be easy to convert over to pressure cooker.

I LOVE LOVE LOVE MY PRESSURE COOKER!! I can literally make a family meal in 15 minutes flat, and that includes dragging out the ingredients! It has a section on how to use the pressure cooker, safety, and general beginner knowledge stuff that really helped me in the beginning. The recipes are great too, and not difficult to make. Enjoy!

I love pork carnitas in the pressure cooker - look at TheWorldAccordingToEggface blog for her recipe. She does hers in a crock pot, but its' so fast in the pressure cooker. I freeze the leftovers in small containers and use it in all sorts of things. My latest favorite is to combine it with a little enchilada sauce or salsa, just a few black beans, some grated cheese and top it with greek yogurt. Mmm... mexican night.
You can make pickles in a pressure cooker???!?!? Do tell!
Actually, you don't need a pressure cooker -- just a big pot with all the stuff for canning. For green beans and other things you NEED the pressure cooker. But for pickles, you don't need the pressure part --just the big pot and the ability to put the cans down into the water bath until they seal.
I haven't made them with Splenda yet -- so we'll see come summer! If they are successful, I will tell!
