Whatcha eating today VSGers...Friday!!
Oh how fun Jenn. Your daughter will remember those times forever. My mom used to take me there every weekend as a wee tot, before the park had admission and worked from ride tickets. We would wander around ride a couple of rides and have lunch. She was 16 years old when she had me so it was probably just as fun for her too!

Not sure if you have ever seen those Vitamins that are like "gummy bears"? Well I found some at Costco and they are Fiber. For 2 pieces it's 10 calories, 5g carbs and 5g fiber. It's one way I can add fiber into my day AND get a "candy" treat.
Chicken Cauliflower Casserole
10oz Boiled chicken breast
1/2 medium cauliflower (steamed)
4 tablespoons cream cheese
4oz monterey jack cheese
3oz mushrooms
Broth from boiled chicken (or water & seasonings)
You can pretty much add anything you want. I mix this all together (minus 1oz cheese for top). Spread it into a casserole dish, top with cheese and bake until nice and bubbly.
When I originally made it I used Tuna so it was MY spin on Tuna Noodle Casserole (used cream cheese, mushroom and broth instead of canned cream of mushroom soup)
It makes about 4 6oz servings so make it THIS size for your family...or make it small scale for yourself.
