Asparagus Soup -- Quite Tasty!
A package of cut asparagus with a few mushrooms and a slice or two of onions caught my eye at the grocery store, and I thought it would make a tasty soup when combined with my leftover chicken broth (from the Chinese restaurant!)
So today, I sauteed the veggies in a little butter, poured in the chicken broth, simmered till the veggies were soft, then pureed it in my Vitamix (bought refurbished from vitamix.com -- LOL- I'm too cheap for a new one!).
And the result -- quite tasty! I have no idea what goes into that broth from the Chinese restaurant, but man, oh man, is it good!
It's cooling down now -- and I'll take it for lunch later this week.
Tonight I'm making pot roast for dinner.
But, my cooking spree is over -- it's back to work tomorrow! I'm doing half days (probably) tomorrow and Friday, then back full time on Monday!
