Whatcha eating today VSGers...Saturday!!!
Well well well...in about 2 hours Alison will be picking me up and I'll be going on my BIGGEST adventure so far for 2013 (I'm going to Thailand in 2 1/2 weeks so that'll be another BIG adventure)....but I digress!!
I'm up and slowly packing my suitcase. Our half marathon is tomorrow so I'm trying NOT to freak out and just go through the motions, slowly but surely. I've had something to eat and now just about to finish. I got my bikinis, that's how I roll so I know I'll be dipping in the pool today, definitely tomorrow and probably before we check out on Monday =) Send us lots of prayers and good wishes.

Enjoy the Marathon! Have you been to Thailand before? What a wonderful place! Are you on a structured tour or on your own? If on your own consider a side trip to the incredible temples of Ankor Wat in Siem Reap Cambodia. (easy flight from Bang**** Link to my photos:

Sure - I like them.
I can't quite handle pork as well as beef yet. For me beef is easier, for some reason, than pork, chicken or even eggs. But I can get 2 oz of the carnitas down without much grumbling and it tastes pretty good. I usually add a decent helping of salsa for lubrication and a tiny bit of sour cream as well. The TJs carnitas are pretty naked - no sauce or such in the package, which is perfect. They're easy to doctor up as desired on the spur of the moment.
Now, i'll say that they are not the best I've ever had, I think you need to go to a hole-in-the-wall mexican place that makes them well to get that. Packaged food can't compare, but, i bet if you put these under the toaster oven broiler for a minute so the edges get crispy like a good restaurant does, you might get closer. I'll try that next time.
The best part is that at 2oz/serving, one package gets you SIX MEALS! Now that's a deal. If you like carnitas anyway.
Serving size is 2oz, for which you get 8g of fat and 12g of protein along with only 1g carb for a 130 calorie load. Seems reasonable. If you're fat-phobic, you can pick around some of the fat and probably cut those grams in half. But for dinner, if you add a little salsa and eat on a crispy lettuce leaf 130 calories is just fine by my plan.
