 There is definitely something in the air...I bought all the ingredients and will be making this tomorrow night...I'm going to try ground chicken instead of breasts since I still have a newbie tummy.

 that's a really good idea Wildcat!  I made it the other day (my surgery was Aug 28) and i pureed the chicken which was still good but i think ground would be better!  Let me know how it turned out...I loved it with a Tbsp of greek yogurt in it...tasted just like sour cream!! yummiest low cal high protein food EVER!!

I was thinking next time I make it I'm going to use meat balls almost like albondigas soup...so enjoy!

I made this tonight and it was delicious! I omitted the carrots, peas, and green beans because I forgot them when I went to the store. But I used all the other ingredients and used my immersion blender in the pot after removing the chicken. It was super easy. I love the shredded chicken. I also added Trader Joe's 21 season salute salt-free seasoning. It kicked up the spice a bit. I am so impressed by this! I can't believe how good it actually tastes with all the green vegetables. I bet it would be even better with the other 3 ingredients I left out, so I'll remember those next time!

I am so glad you like it, and remember the calories on this are so low, you can use it as your secret weapon.  This is what I ate most during my losing stage.  I always had some of this soup or one of my other soups on hand to eat if I was hungry.  The under 60 calories a cup saved my butt more times than I can tell you.  Enjoy.

This must be the week for Elina's soup. I made it too with chicken thighs, uped the onion & garlic, also added Everglades Heat & chili peppers to spice it up. So good. This could all be pureed - even the meat for those at puree stage.
