Have you figured out a way to cook them so they don't feel all chewy and squeaky when you eat them? If so, please share! I love the idea, but have only tried them once because the texture was so tough. Would love to know if there is a trick.

 Yes.. I make shiratake noodles.  Rinse really well.  Then use paper towel to dry them really well, cook, then dry them again really well.  Makes a difference. 

Try this sauce:
1 wedge laughing cow swiss
1 tsp sour cream
2 tsp reduced fat parmesean
salt and pepper to taste

I mic the cheese briefly to soften it up enough to mix the rest, then put on hot noodles and toss.  Like alfredo and super fast and low cal.
