Gazpacho Soup! YUMMY ")

 Gazpacho Soup COLD...

4 lg tom.
1 green pepper
1 med onion
1 cuc
1 clove Garlic
1 C. Chicken Broth
2T. Vinegar Red
3T. EVOO
1tsp salt

Peel the tom. by dropping in boiling water for 10 sec. Run under Cold water, then cut out the stem and slip the skin off.  Cut them in half crosswise, pluck out seeds, and chop the tom.  Remove the seeds and membranes from the green pepper and cut up.  Peel the cuc., slice length wise and scoop out seeds and chop.  Peel and chop onion and press the garlic.

Put the chopped veggies, broth, vinegar, EVOO and salt into blender-whiz til smooth. SERVE ICY COLD.... SO YUMMY

 I am always on the lookout for a good Gazpacho soup. Thanks for sharing! I do believe I will make this for the weekend to take to work for lunch breaks.

 Its the first time I had it, I didn't think I would like it but it was really good! SOOO Healthy too
