Whatcha Eating Today (Fri 6/29/12) VSGers??
B: 1 hard cooked egg, 1 tbs low fat cream cheese, 1 slice bacon
S: Another hard cooked egg
L: 1/2 c black bean soup, a little raw onion tossed in and a shake of hot sauce
S: Nectar Lemon Tea shake
D: 2-3 oz grilled chicken if I can get my butt in gear to cook it's 95 degrees and if not some deli turkey instead
Water: half done
Vits: Ditto
I was going to start walking today but messed up my knee going up a flight of stairs yesterday :(
I'm a little worried about it....will monitor and re-assess...it only hurts going upa nd down stair. I've been walking all over at work today and no significant pain. I may go out tomorrow a.m. and give it a whirl.

I used the egg plant I grew its the long and skinny ones, shake N baked them then layered them in the muffin pan, 1tbsp of cheese then slice of onion then sauce, egg plant the more cheese. Bake them for about another 12-14 mins and bammmm you have egg plant muffin cups just kind of threw it together! Its really good thou not alot of protein but I needed something different.
