Whatcha Eating Today (Fri. 6/15) VSGers??

Hi there - I'm over a year post-op. If it's dense protein, like a hard-boiled egg or a turkey burger - it doesn't take more than a few bites to fill me up. I just had a hard-boiled egg and I am *stuffed!*

If it's other food - I can generally eat more. I put away quite a bit of a salad the other day at lunch.

Slider foods - popcorn, crackers...have to be very careful. Can eat too much of them. :)

It is a variation of a recipe that I found on  www.theworldaccordingtoeggface.com however I did not have any almond butter so I used Apple Butter
    2/3 cup Oatmeal, dry
    2/3 cup Sliced Almonds
    1/2 cup Pecans, chopped
1 scoop Protein Powder (your favorite flavor, I used Vanilla)
    1 teaspoon Cinnamon
3 Tablespoons Sugar Free Torani Syrup (I used Sugar Free Vanilla)
    3 Tablespoons Apple Butter

Mix together with a fork till clumps form. Sprinkle clumps of the topping onto a baking sheet (I lined it with parchment paper) and bake for 20-35 minutes at 350. ( I baked mine a little longer because I like my granola crunchy... but keep an eye on it as it may burn) Allow to cool. When cool store in sealed container for several days.

It makes about 2 cups worth and each serving is 1/4 of a cup (however I only use about 1 Tablespoon on my Greek yogurt)

I love it!
