Hey I'm geeky to and did the same thing with a ton of her recipes!

For the eggbites I actually use ham steak instead of the sliced...  This time I added the onion and ham steak without cooking them first, a lil garlic and they were fantastic.

I only do 350 for 20 minutes and they are soooo good.

 I've been dining them recently too. They are great and I just grab one from the freezer and take it to work, then nuke it. And Ryan's right- be creative. I've used the sausage crumbles with chopped onion, bell pepper, and cherry tomatoes. I've also done them with cheese and different veggies. And I run each different recipe through MFP and they are low in calories and have a good amount of protein in them.
