Veggie Egg Muffin Cups.. (AFTER) PIC

 I'm gonna hold you to that Ryan .... Overnight 'em please!!!  ;)

They are soo good! I made some today for me and my kids. I mixed the eggs, shredded mexican blend cheese, cut up deli turkey ham, spinach and after they were done, I topped them off with more shredded cheese. My boys love these too, they either dip in ketchup or hotsauce. You must try them, I usually want to put the leftovers in ziplock bags to take the next day to work for bf but I never have any left over, lol. They are in mfp under mini omelet muffins, I think, lol.

 Gabbz, you are my long lost sister without the "dork" factor.  I promise to try them by this weekend .... After I receive my 1st batch from Ryan .... GET IT!!! 

You are very smart!  What veggies did you select?  How long did
you cook them, and at what temperature?  I want to try this as
soon as I am cleared.  There are such clever people on this
website, with such wonderful ideas.  I have been making a cookbook
of all the great suggestions and recipes everyone has to offer.
I am not a cook and any tips are gratefully accepted.

 I baked them on 400 for about 20 mins. Use what ever veggies you like... I used onion, g.pepper, tom.,mushrms... You can mix it up last time I put spinach in them with 1/2 a cheese stick

These are a variation on the Egg Bites on the eggface website.

The only reason I mention this is because there are lots of flavor combinations listed on her site. You can use up a variety of proteins and veggies in whatever combination you want.

I geeky enough to say that I looked at the recipes and made a "spreadsheet" of all the different combos she has. Makes it easy to combine flavors.
