Tonights supper!!! with picture

I could only eat 1/2 of what was in the red pepper!! Recipe below..




Atkins Alfredo Sauce

2 tablespoons unsalted butter
1½ cups heavy cream
½ cup grated Parmesan
¼ cup grated Pecorino Romano
1/8 teaspoon pepper
Pinch ground nutmeg
Directions:
1. Melt butter in a medium saucepan over medium heat. Add cream and simmer until reduced to 1 cup, about 10 minutes.
2. Remove from heat; stir in Parmesan, Pecorino Romaro, pepper and nutmeg until the cheeses have melted and sauce is smooth.
3. Serve right away.


I used Shirataki macaroni noodles tonight...

This is the same recipe. But, with chicken...

1 net carb in the noodles....and there is none in the sauce...It's cheese and a little heavy cream!!!

WOW!!  That looks fabulous!!!!  How did you like the Shiritaki noodles?  I have wanted to try them but am too chicken!  LOL

I enjoy them!!..But, you have to have an open mind while trying them! And try not to compare to a regular noodle.

I hope to see more posts with pictures like this, it's really helping me as I prepare to transition to softer foods next week.

I would love to see a daily thread full of the recipe and picture of what people are eating with their VSGs! I think I have a goal :)
