Eat your protein! Healthy, yummy steak or meat topping!!
Hey guys,
I know how monotonous getting your protein can be...Its easy to get burnt out on meat..I usually use this on skirt steak, I fry up a skirt steak in some olive oil, salt and pepper. Easy. And when its done I top with this sauce and its delicious. I'm sure it would be great on chicken too.
Modified Chimichurri topping:
All you need is:
FRESH cilantro, Olive oil, Salt, Pepper, FRESH garlic, FRESH lime juice
(When I say Fresh, I mean fresh. You are cheating yourself by using bottled lime juice or bottled garlic, Fresh has so much more flavor, it really makes the difference.)
For a small batch I use 2 handfuls of cilantro, 1 clove garlic, a drizzle of olive oil, salt and pepper to taste, the juice of 1/2-1 lime. Whiz it all up in the blender or magic bullet. Adjust salt and pepper and lime juice to your own tastes. Easy!
If you dont use Cilantro, its a wonderful, very inexpensive fresh herb near the fresh parsley in the veggie section. It has a bright flavor that compliments steak well. Chimichurri is usually made with parsley, but I definitely prefer the flavor of Cilantro.
And the health benefits..Cilantro is loaded with antioxidents and vitamins, it aids in digestion, protects against salmonella, acts as an anti-inflammatory, helps with flatulence (ha!), and even helps the body remove heavy metals like aluminum from the system.
