Mock Rice Pudding and MacNCheese - as mentioned at LB Coffee

These are so OLDIE but GOODIE recipes.  I am NOT the creator just passed them on.  I'm making BOTH today to have my sweet fix for the week

Mock Rice Pudding
1 box sf vanilla instant pudding
1-2 Cups Milk (soy, almond, whatever)
16 oz. cottage cheese
cinnamon and nutmeg to taste
1 small box of raisins (snack box)

Mix milk and pudding mix as directed (I saw a note to myself to use only 1 cup of milk maybe I wanted it thicker??)  Add in remaining ingredients and refrigerate for two hours or overnight is even better.  The raisins will plump and soften.

If raisins aren't in your plan yet, omit them, taste is still great! I've also made this with other flavors of pudding and it's yummy.

Last time I posted this someone mentioned blueberries and why YES I have some blueberries in the freezer.  I might just omit the cinnamon and nutmeg because I can't see those flavors with blueberries...but that's just me!!

"Mock" Mac'n'Cheese

This really tastes like macaroni and cheese - the homemade kind, not the Kraft kind. 

1 pound EXTRA firm tofu (the firmer the better my store only carries 10oz so that's the size I use)
2 cups grated cheddar cheese (8oz)
2 eggs 
1/4 cup cream
salt, pepper and garlic powder (whatever seasonings you like to add to taste) 

Use a fork to mix up the tofu (you want to make the brick of tofu into a chunky/crumbly type consistency).  Add remaining ingredients reserving about 1/4-1/2 cup cheese to sprinkle on top.  Put the mixture in a casserole dish and bake at 350°F (180°C) for 30 to 40 minutes, or until it is bubbly and lightly browned on the top. 

You can make this a complete meal or a larger casserole by mixing in steamed cauliflower and/or cooked chicken...but it's GREAT just as listed =)

 I am cooking impaired...

When you say stir the tofu with a fork are you smushing all of the tofu, or is it cut into cubes or something and just mixing togethr the other ingredients?

I have never had tofu, but willing to try something healthy.  It sounds really
good.  Thank you for the mac-n-cheese recipe.  Since I am not familar with
using tofu, should I mush up the tofu or cut into pieces? Thanks a bunch.

I hadn't had tofu until this recipe either and it's really the only time I have it.  You want to make the tofu into a chunky/crumbly type consistency.
