I did it!! I decided to go ahead and make them tonight. They really were not that hard to make. The biggest deal is I hate touching the ground meat/egg mixture. Kinda grosses me out! I REALLY need to stop doubting myself! They are really good!

 There are pans just for meatballs too.  They have a rack on them and are designed to hold the meatballs up out of the dripping grease.  Here is an example:

The rack makes it so the meatballs are easy to get in and out.  This one is only 8.50 too delivered if you are a prime member.

That is really cool! I may just have to buy one. I made them on my broiler pan and they turned out really good. Thanks for the info!!

Yea Nana, I ended up buying it last night after I posted the link for you.  I had been looking at them for a while, but it wasn't worth $25-$30 for a pan that is so specific in use.  This one dropped drastically in price and the review says the pan itself is a nice weight and useful beyond the meatball thing.  Totally worth it now :) 

I have a bag of costco meatballs to finish, but from that point out I am going to make my own with low carb bread crumbs and a spicier kick then what one normally gets.  One day soon the girls and I will have a little meatball party :)
