Quick Lunch Ideas... (after the first few months)

 I am so boring, it's always pretty much deli meat, with cheese and onions (I love a good red onion rolled up in some ham and cheese!), lately I have added roasted red peppers too my turky rolls, so good!

I love the Hillshire Farms Herb Roasted chicken....yummy!  But I am bad now, I can eat it with a little bread, mustard and mayo...

cottage cheese- chili-  weight control oatmeal.   Always try to keep these around.  I also like eggs so a scrambled egg with a slice of cheese works for me too.  Nothing very creative but it works for me so far.

Yeah, I like the chili idea... and the egg scrambled. I hadn't thought of just scrambling an egg. Ohhh.. maybe I'll make deviled eggs too!

I get low-carb small tortillas (50 calories, I think only 2g net carbs) and use them to make "sandwiches".  My latest favorite is turkey lunchmeat, goat cheese, and a little bit of cranberry sauce - fold, heat, num..num.

I also like tuna salad - chopped cucumber, tomatoes, little mozzarella balls, a little fresh basil, and ventresca tuna, and a little bit of oil & vinegar (thanks Eggface!)

I used to be able to do peanut butter - those little Jif to-go packs, half a one with maybe 3-4 really tiny multigrain crackers, but I'm finding pb is a total trigger food for me.  The other half of the pb calls to me.  Sigh...

Yes! The tortillas. I had forgotten about them too. I used to toast one really good, put some sauce on it or olive tapanade, then heated up leftovers and... voila. Pizza from the skillet. Duh!

SO glad I asked this question. Some of the obvious stuff was eluding me. I think I just got stuck in a rut.

Ohhh.. pepperoni! I wonder if there's a low fat salami too, I've been avoiding it because of all of the salt. LOL! :)
