I recently discovered roasted edamame - lightly salted. I was skeptical at first, but I love it. It's perfect.

It's 130 cal/serving with 14 g protein and I think 8g fiber. I can't eat much more than 1/4 cup because it's extremely filling. For those who like the crunchy snacks, try this!

I love steamed Edamame! I love eating them out of the pod, they taste buttery! MMM I will have to find the roasted edamame.

I got them from a bike shop lol - I've seen them in a couple sports stores. Haven't seen them in a normal grocery store though.

 Edamame is an immature soybean.  It is usually served boiled in the pod.  To roast them, toss them ith whatever spices you like and olive oil or canola oil.  Then roast them in a shallow pan for 10-15 minutes.  The outsides get crunchy and the insides get kind of creamy. 

They dont keep for long though, they lose their cruch quickly.
