I go for low carb - it is pretty easy to stay under 40 once you are off food restrictions.  I buy low carb tortillas which I can eat 1/3- 1/2 of one.  Keep in mind you will be eating small quantities so things with like 20 carbs for you might 6-8 when you get your portion.  I like the premium mini saltines - and baked tortilla chips.  I eat a lot of ground meats and those things help to add cruch without a lot of carbs - plus they are small and easy to count out.   peanut butter and and kind of nuts - go for high protein and read the labels - all brands have different numbers.   In the early stages 1-2 months - it is all about protein - that was all I counted - the rest comes later.   Now at almost 5 months out I focus on protein and carbs and water and make sure I stay within my calorie range.  Thats it - hope it helps!  Also watch out for protein drinks/bars - they can have major carbs!

I love to put some shredded cheese in the microwave until it is crispy. Once they are done I dip them in salsa. It gives me the crunch I crave from a really carby food but helps me meet my protein goal at the same time.

I tried microwaving some provolone but it ended up that I couldn't seperate it from the wax paper.  What's the trick?

I've never tried provolone cheese - not all types of cheese work well for cheese crisps. Also, I don't use wax paper. Just used either a coated paper plate or a regular plate sprayed with non-stick spray (Pam). I've used cheddar cheese, monterey/colby jack cheese blend, parmesan cheese, and Swiss cheese, and all work well.

There are way too many options to list. It's easier to list the things to avoid:
breads, rice, pastas, potatoes, corn, cereals, juices, plain fruits (especially dried fruits), and sugary/starchy junk foods (candy, pastries, ice cream, etc.)

Focus on meats, non-starchy veggies, eggs, cheeses, some dairy (Greek yogurt, cottage cheese, etc.), some nuts/nut butters, and lower-GI fruits like berries.
