Tuscan Spinach Chicken

OMG it was the best thing I've had in awhile.  I got it from this guy http://www.jorgecruise.com/

3-4oz Chicken Breast
1oz Mozzarella Cheese
2oz Spinach
some sliced mushrooms
1 garlic clove
oregano
1 1/2 tsp olive oil
salt & pepper

1) I marinated my chicken breast in 1tsp olive oil, oregano, salt & pepper.  Grill (I used my George Foreman)
2) While chicken is grilling saute,  using .5 tsp olive oil, spinach, mushroom & garlic.
3) Take Chicken breast, top it with sauteed vegetables, top with cheese.
4) Place under the broiler until cheese is nice brown and bubbly

That is sooo my kinda food !!!!

I do a similar thing with beef or pork also.....

If you really wanna get freaky....... ad a little pesto !

It was really amazing...I was moved for like 10 seconds to take a picture but my fork beat the camera =)

Holy smack Ms. Shell! That sounds awesome!

Question: Do you coat both sides of the chicken with mozzarella so that it makes a short of shell around the chicken?

Nope you just layer, first the chicken, then the sauteed vegetables then top with the cheese and broil.

It was by FAR the best thing I've made in awhile!!
