Bougie Question
A 36 is fine - it's what I have! It's kinda right in the middle of the range that's used, which I've seen as small as 28 and as large as 42. Someone will hopefully post the picture showing the difference in size using sharpies/markers as guides.
Bougie size is only one component. The bougie is only used as a guide. Your surgeon's technique also matters; how tight his assistant pulls the stomach around the bougie matters; the shape and length of your stomach matter. If it's something that worries you, ask you doc why he uses that size.
At a year out, I can eat between 4-5 oz depending on how dense the food is and my restriction is just fine.

I have a 36, and I'm 3-1/2 years out and maintain about 20 pounds below goal. I still have great restriction. However, you will find that carbs slide right through and you can eat a lot more of them than dense proteins. But it's true what was said earlier, it epends on the surgeons technique as well. Mine pulls very tight and oversews.
