This is a recipe I use often.
1 pound turkey meat
1 egg
1/2 cup bread crumbs
2 tablespoons fresh parsley
1/2 grated onion (grated onion produces juice from onion)
Sometimes, I add 1/2 cup shredded parm cheese if using marinara sauce.
I do not manipulate meat mix too much! It causes tough meatballs. I bake for 15 minutes then I add any sauce and continue cooking 10 minutes. I hope this helps!

Do you use the store bought bread crumbs or do you just make your own by tearing up bread.? I have never put onion in mine. But I will now. I dont know why I have never thought of that. You use the entire egg. I am guessing after you loose so much weight and your helath gets back on track eliminating egg yokes for cholesterol watch is not a major concern any more. I am looking forward to this.
are the ones you make not soft and juicy? If so you might omit the crackers since it's the crackers that usually are there as a filler to absorb moisture. MY meatballs, loaf etc I basically just use ground turkey (pork, beef, sausage depending), grated onion, chopped bellpepper (which I saute to soften) and an egg. I roll them into balls and usually just cook in a skillet on top of the stove.
