Work has been insane and not looking to get any better anytime soon. So, I am probably just doing a fly by post till the next time I land near my home laptop.I was really feeling rundown and not sure I was going to be able to keep up. In desperation I stared doing more shakes and vitamins, and decarbing....I cleaned out my work snack drawer and restocked it with almonds, beef jerky, and a little bit of very dark chocolate for emergencies...my snack cabinet at home is stocked similarly...the fridge is full of meat, cheese, low carb yogurt, and eggs...AND I discovered I love ISOPURE....I had so bee avoiding it because I had it confused with those fruity drinks from the hospital.
Between the decarbing, increased protein from the shakes, and an additional dose of my multi vitamin and calcium; I am feeling MUCH better than I was. My energy level is back up to normal. My nonstop grazing as slowed down and I feel restriction again.

NEEEEXXXTTTT.....
Pull the stems out of one carton of washed mushrooms.
Throw the stems in the food processor with 1/2 onion, a clove or two of garlic, and a few leaves of spinach. Run the processor on high for about a minute ( till its all finely chopped.)
Saute in olive oil until brown, add in 1/4 of cooking sherry, and 1/4 of chicken broth. Let it simmer for 3-5 minutes. Remove from heat and add in only enough bread crumbs to absorb the extra liquid.
Put the mushroom caps on a baking sheet (with sides) that ha been lightly coated with olive oil. Spoon in a baby spoon sized dollop of goat cheese ( I used tomato basil flavored but any flavor or plain would work)...top with the sauteed mixture and sprinkle on some parmigiana cheese.
Bake at 375 for about 20 minutes. UMMMM...They are great even with out the goat cheese.
