Ok this is just one of those random questions.  I used to buy "jumbo" eggs and now I've been buying "xlarge" eggs.  These still seem a bit too big for me.  So it got me to wondering, what size eggs do you buy?  Totally random, but just curious.

Random various sizes!
We get farm eggs more than store, so they range from small to OMG that had to hurt! I save those for DH, they would be waay too much for me. I do good with the standard store large size, that's a meal for me.

one of my hubby's coworkers has chickens, we buy our eggs from him....  they are actually fairly small, depending on which chickens they came from, and sometimes the yolks are in odd places (wouldn't make AA grade if going thru commercial channels) but i notice that the color of the yolks is much brighter than the ones we get in the grocery store, and the shells and membranes are thicker..  which makes me think that the chickens we are getting them from are healthier....   and i feel good about that...

I buy JUMBO eggs...Much more bang for the buck. large eggs are about 1.80 a dozen and the jumbo's are like $2.15 - hold them up next to each other and there is a dramatic size difference. I use a lot of the white only as the protein is all in the whites (albumen). If I have leftover scambled or ? I just throw them in the fridge and add them to soups or whatever...

I buy jumbos but mostly because I have a little store nearby that sells local eggs...and that is what they are....lots of double yolks. But they are so fresh ! Most mornings that I cook one, I cannot eat it all, but the dog helps fini**** !!!

I have a farm so whatever comes out of the chickens butt is what I cook...LOL!  BTW the color of the shell makes no difference as to the egg inside.  All the same.. just like beef, it doesn't matter what color the steer is the beef will pretty much be the same.  For freshness the yolk should stand tall and the white should stand tightly around the yolk ,not run across the pan.  If you put your eggs in a pot of cold water the fresh eggs will lay on their sides on the bottom, if the egg stands up on the pointy end it is less fresh, if the egg floats do not eat it...as the egg ages it will emit gas inside the shell, the more gas in the egg the higher it will float, the higher it floats the more likely it is borderline or right on rotten.
