That looks really yummy!  Care to share the recipe and/or nutrition breakdown?

Sure!!!

I still don't really count calories...I just keep and eye on the protein and carbs..

Rice paper
Vermicelli
carrots
cucumber
green onions
chicken breast
romaine lettuce
fresh cilantro, basil
fish sauce
satay sauce..

Soak carrots in fish sauce....cut veggies fine...chop herbs...soak rice paper in water then build!..Drizzle a little satay peanut sauce, or sweet chili sauce.

I just count the rice paper with 8 carbs and a couple for the sauces and veggies...There isn't a whole lot of anything....I think next time I will use bean sprouts instead of the vermicelli.

That looks so tasty... always been a fan of the salad roll but was thinking it was out of the ballpark carb wise... wonder if my local Vietnamese restaurant would make me one with just chicken or shrimp and lots of veg.... how yum would that be!
I confess I've never had much luck with those wrappers myself. But I do love how they taste!
Thanks for sharing.
