Bacon and Cheese Mini Frittata's (Muffin Cup Recipe)

 They are good.  I also add diced tomatoes and jalapenos to mine, I use a slightly different method of cooking whole bacon strips and placing the strips along the outside edges of the muffin holes...kinda like egg wrapped in bacon.

I have to make 'em by the dozen a couple of times a week, my wife and son kill 'em.
