Guess who's back? Look who's typing? It's ME...did you guess right?? Well girls and boys, posters and lurkers, Ms Shell is home. Let me just start by saying I MISSED you all terribly!! One day I'll recant Shelluary but for now let's talk FOOD!!
LND (Last Night Dinner) = El Pollo Loco: 1 Wing; Vegetables
LNS = El Pollo Loco: 1 Leg
B: Oops I haven't really had it yet, just Coffee (bad Shell)
S: Crustless Egg Quiche thingie
L: 2 Turkey Dogs w/chili; cheese; onion (no bun) = OMG I'm so full dinner may just be I duuno a protein shake...tbd
S: 3 Lumpia
D: 2 Wingettes
Water: 64oz so far
Vitamins: Got them all in
Exercise: Goal 10,000 steps (6745)
Attitude: On top of the world. My coworker was on Jury Duty and I was doing my job and hers (which is why I hadn't come back after Shelluary...that's February for those who don't know). So March was really MADNESS for ME) but I'm back!!

B: 1/2 Bagel with honey walnut cream cheese (not so good, I know)

Vitamins: Just my Pariot, but, before I leave
Exercise: A bit of walking to the hospital and shopping.
Attitude: A bit nervous, have to go and get my drains out today, but, I will be fine! Going out for lunch with one of my besties for Pho soup! Ended up eating at Costco. Ran out of time and we needed to eat!...LOL

Here is our curry recipe and it is sooooooooooooo good!!!!
we added scollops to this one!
Chris's Indian Curry
Saute 1 lg onion ...set aside
Saute 1 green pepper ... set aside
Saute 8oz of sliced mushrooms...set aside
1lb of chicken...breast or dark meat if you choose.
Then add all the above ingredients with...
1.. 28oz can of tomatoes
Coconut cream to taste
Add Patak's mild/hot curry paste... Yummmy..
He does add fresh garlic when cooking the meat and other spices, I will have to get into the cupboard tomorrow and guesstimate...He says it's a secret!!!...I do make it too, but it's never as Yummy as his.
Simmer for a couple hours to reduce liquids.
Add 1/2lb of scallops about 10 minutes before serving.
Eat this over rice, pasta, or a Patak's Pappadum with it. adds carbs though...
PS...We use beef with this a lot to and shrimp. Some times all together.
