I don't know if you all have tired this yet. I tend to be really low carb but the carbs aren't too bad and it is super healthy! I'm looking for some healthy carbs to help with maintenance when for when I get there.

Quinoa is an ancient Inca grain that doesn't have gluten because it is a seed!! It has lots of good nutrients in it and the Incas referred to it as the " Mother Grain". Goggle it... interesting stuff.

Anyway I fried a bit in garlic oil and then simmered it with onions, mushrooms. peppers some carrots ( all diced Small) some spices and chicken with chicken broth and it ROCKS!!!!

I ate less than 1/2 Cup with all the extra stuff I put in it maybe 1/4 of a cup?

Plain Quinoa -has: ( per 1/4 cup)
Calories - 85
Total fat - 2.8
Carb - 15
Fiber - 2
Protein!!! - 3

Love it!  I mix it with a little bit of melted cheese for a mac 'n cheese fix.  :)

It's very good and can even be used to make a breakfast cereal (like oatmeal).

I use the red quinoa instead of rice for everything.

Thanks for the ideas!! How does the red differ in taste?

I get it at the local health food market. They sell it like they sell coffee beans ... you load a bag with the amount you want. Or you can get it in the organic aisle at your local grocery in a bigger box.
