How do you eat ricotta cheese?

Okay, call me dense.  I don't really know how I'm supposed to eat it.  I've heard of warming it with a spoonful of marinara sauce.  I've also heard of adding cinnamon and sweetener.  How does this work - is the cheese served hot or cold when it is made sweet?  Any other ricotta ideas for me?  I bought a container of lowfat ricotta to help up my protein, but I don't know what to do with it!

think of it as a base for every seasoning you like.  Warm or cold, sweet or savory, it is your artists's pallete, all you need is imagination and a spoon!  As a chocoholic I have a passion for taking a fat free, sugar free hot chocolate mix, stirring the liquid into a cup of ricotta and then refrigerating it.  Later, chocolate cream!  It is the filling in the italian patry cannoli, it is the filling in stuffed manicoota (with marinara sauce)  it is as versatile and forgiving as tofu (what! tofu! yes all these same things are possible with tofu!).  or plain!  A spoonful or two when I feel like "gottahavesomething!" works just fine.

I like mine with alittle sweetner, and chop up some frozen cherries fine, and a little Almond extract.  Yumm.  Some times I just add the Sweetner and Almond Extract. I think I saw a recipe for  a fluff, using ricotta, & pudding mix.   Sounded good. You can eat like cottage cheese, with alittle pineapple.. use your imagination. Good Luck

My fav is to mix it with a bit of splenda and co-co powder. I eat it as a desert:) Beth

I think there is a good recipe in the South Beach Diet book.  Wish I could find my copy--but ,of course, it's MIA.  I think it is similiar to the one posted with splenda and cocoa powder.  I definitely ate it cold and as a dessert.  It's pretty good! Lisa

Well, ricotta is the filling in lasagna ... how about warming it with a bit of smooth spaghetti sauce and maybe some parm cheese?

Here's a bunch of cottage cheese recipes:  cottage cheese   I'm no chef but I would think some of the same recipes would work with ricotta.  I eat mine with Hidden Valley Ranch seasoning stirred in.

It is also very good with the Tru-Lemon or Tru-Lime and a bit of sweetner as a cheesecake kind of taste.
