Chunky Pumpkin Chili

Makes: 8 servings

Ingredients

2 lbs (900 g) ground beef

1 large onion, diced

1 green bell pepper, diced

2 x 15 oz (420 mL) cans kidney beans, drained

46 oz (1.3 L) can tomato juice

28 oz (794 mL) can peeled and diced tomatoes with juice

1/2 cup (125 mL) canned pumpkin puree

1 tbsp (15 mL) pumpkin pie spice

1 tbsp (15 mL) chili powder

1/4 tbsp (4 mL) SPLENDA® No Calorie Sweetener, Granulated

Directions

In a large pot over medium heat, cook beef until brown; drain. Stir in onion and bell pepper and cook 5 minutes. Stir in beans, tomato juice, diced tomatoes and pumpkin puree. Season with pumpkin pie spice, chili powder and SPLENDA® Granulated. Simmer 1 hour.
