  Okie Dokie gals and guys, its  "FRIDAY" Praise the day we have the weekend again. It's been a very long week for me w/ PT nad having to see the plastic surgeon yesterday for a  issue and then I get  streroid shots I was prepared for ouch  but I know they will be worth it in the end. She says things are looking good. So lets  get on w/ the weekend. Hope all has a great one and safe. I also seen a recipe exchange for the holidays for the newbies, I think this is a awesome  thing I know it was tough when I was first out and  getting through the holidays, since my surgery was on Halloween I had to go threw all  the holidays and it  was rough. So if you have  those sugarfree recipes and or whatever please post them here so they have a variety to try.  I have a beandip I forgot who gave it to me  Ill be right back with the recipe. (Iremember now my aunt)  Very good. There are also  some different  protein balls recipes I have gotten from different ones  enjoy....

  Bean Dip  
 
 1- Large can of refried beans       (By taco bell is best)  
1- Regular can diced tomato’s  (Either green chilies or jalapenos) {I didnt use the jalapenos} 
1- Large container of sour cream  
   (16oz)
1- Bag Colby/jack shredded cheese
1- Pack taco seasoning 1- Bunch green onions   
  Layer in dish Refried beans Sour cream Tomatos Taco seasoning (sprinkle entire pack on top of tomato’s Cheese on top (entire bag) Chop thin onion tops on top to garnish. I added cilantro to my mix for extra flavor and an extra   Can of beans.

PROTEIN BALLS
1 cup Peanut Butter
1 cup rolled oatmeal -- not the instant stuff
1 cup protein powder
5 packets Sugar substitute

Warm the peanut butter in microwave about 30-40 seconds -- it melts it and makes mixing in the other ingredients much easier. Add the oatmeal, protein powder, and Sugar substitute and mix well. (If needed, you can add a little bit of water to make it easier to mix) Roll into walnut sized balls, refrigerate. Store in fridge in zip-lock baggies. This recipe makes 20-24 balls.

PROTEIN BALLS II
1 cup of protein powder (chocolate or vanilla)
1 cup of non-fat dry milk
1 cup of rice crispy cereal
1 cup of peanut butter
Sugar substitute to taste
Cocoa powder mixed with Sugar substitute

Add the Protein Powder, Dry Milk, Cereal and Peanut Butter in a mixing bowl. Mix thoroughly making sure that all the dry milk is in the mix and not really visible. If you like it really sweet, add some more Sugar substitute to fit your taste. Form the mixture into small balls (about 1.5 inches in diameter) Roll in the cocoa/Sugar substitute mix. Refrigerate.

PROTEIN BALLS III
1 cup peanut butter
1 cup sugar free honey
1 cup unflavored protein powder
1/2 cup grape nut cereal
sprinkle of cinnamon
sprinkle of Sugar substitute

Mix peanut butter, honey and protein powder together till well blended. Form into balls. In another bowl mix grape nuts, Sugar substitute and cinnamon together. Wet peanut butter balls with water and roll into grape nut mixture. Place in frig and grab when you need a yummy snack!

I just love to collect recipes! Here are a couple of ones that I enjoy from time to time.

Angle Cake

1
sugarfree angelfood cake 
Poke holes with a straw in the top- set a side

4 serving box of sugarfree strawberry jello.
1 cup ho****er
1 cup cold water
mix and then slowly pour over the cake.

Let it set for at least 2 hours in the refrig
Top with SF cool whip
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

Fruit Fluff


1 tub SF Cool Whip
1 small pkg SF White Chocolate or Cheesecake  pudding mix
1 can SF crushed pineapple, well drained
Frozen berries (strawberries or mixed berries) 

Mix togethe the DRY pudding mix and whip
Spoon in drained pineapple and berries
Refrigerate for about an hour

Walmart  has them in the bakery dept. I have seen them from time to time at Foodlion deli / bakery also.

Adding one now & more in a bit. :)

Buffalo Wing Chili

I package of chicken breasts (bonelss/skinless)
2 cans of great northern beans
Blue cheese dressing (your favorite kind)
Buffalo wing sauce (Frank's found in Kroger)
Garlic powder
Olive oil
Celery

In rather larger cooking pot:
Heat 3 to 4 tablespoons of olive oil
Add garlic powder browning it a bit
Add chicken until cooked well (some pink showing)
Add both cans of beans (drained)
Stir in blue cheese dressing & buffalo wing sauce to taste
Simmer then when close to down add chopped celery

Serve & ENJOY!

***For hotter tastes add more buffalo sauce; for milder taste add more blue cheese.

A holiday-type recipe I enjoy:

MOCK RICE PUDDING

1 small package of Jello fat free, sugar free vanilla instant pudding

2 cups fat free milk
16 oz Breakstone 2% cottage cheese
2 snack size boxes of raisins
cinnamon (to taste)
dash of nutmeg

Make pudding according to the directions on the box, adding spices before you whisk pudding.  Once the pudding begins to get thick, stir in cottage cheese and raisins.  Place in refrigerator and let set for about 1 hour to blend.
