Fall Food Ideas - Share!

Good am ya'll!

Having my & thought I'd post this. Hope ya'll are enjoying the weather as much as I am. Its been a gorgeous week with hopes of it continuing. Because Fall is coming I'm curious about what your fav Fall dishes might be? I'll get things started by adding a few of mine here along with recipes. Hope to get some new/great ideas!!!

Chili

1 bag Morning Star Meat
1 packet McCormick Mild Chili Powder
1 can Pinto Beans (or type of bean you like)
1 can Corn (for color/added flavor

Heat on stove top until done. Also done in the crockpot with double the ingredients. Let it slow cook all day on low. **Add 1/2 a cup of water when done in the crockpot.

Vegetable Soup - homemade w/ chicken broth. Adding the regulars for us would be potatoes, corn, celery, carrots, green beans, diced tomatoes, salt & pepper to taste (most veggies have some salt in their cans so be careful there unless you can get no salt added) & I sometimes add Old Bay or Creole seasoning.

For a quick recipe us 4-6 cans of Vegall Mixed Veggies Original Low Sodium, chicken broth (liquid), parmesan to thicken it up & essential spices to taste. Simple, easy & GOOD!

Stuffed Peppers (had last pm for dinner)

Medium sized peppers
Pinto Beans
Taco Seasoning (Mild/Lower Sodium)
Morning Star Meat
Onions & Mushrooms  (for added flavor)
Mozarella Cheese

Pre-heat oven on 400 degrees. Mix beans, taco seasoning, meat & onions/mushrooms in stove top pan. Coo****il done
/mixed well. Add mixture to peppers. One layer of shredded mozarella then top of pepper then another layer of mozarella. Bake in oven until cheese & top of pepper is nice and brown.

I have suddenly become a fan of yellow & orange peppers and was thinking about looking up a recipe for stuffed peppers.  Now I will just try yours.  Thanks!

For fall I love the classics.  Pot roast in the crock pot (leftovers make a great stew/soup with veggies), Cube steak (sometimes we fry it up a bit with flour in olive oil or sometimes we bake it with peppers & onions), chili is one we enjoy a lot too.  Turkey or chicken slow cooked in the crock pot.

As I checked out this seasons soccer schedule, we have a lot of late afternoon/early evening games.  I plan to use my crockpot a lot in order to have dinner cooked, ready and waiting for us when we are done.  Will be looking for new recipes to try.

I LOVE crockpotting! I also do roast, taters, carrots & onions as well. We love peppers too. A note to mention about the stuffed peppers: we don't eat rice in ours as it doesn't settle well. I know a lot of folks use rice in theirs.

Great post, Katt!  Maybe we could refresh this one once a week?

I think the beans (not beads...lol) is a good replacement for the rice that usually goes into stuffed pepper.  I know I can't tollerate rice anymore.  I do have a question though.  The Morning Star Meat...isn't that the meat wanna-be...tofu?

I will go through my recipes & share some later.

I love my crockpot/slow cooker. I use it at least oncce a week.
One of our favorites is -
BBQ
12 oz Diet Coke w/Splenda
12 oz S/F catsup w/Splenda
12 oz chopped onion
2 lbs of Beef Stew meat or pork or chicken

Brown meat and put in cooker. Dump rest in and
Cook on low 8-10 hrs.

We like this with Green Beans and Cauliflower Rice
