I have a craving for scallops, but not a clue what to serve with it.  Any ideas?

Back when I could have them (and I can have them again in just a few weeks!) I loved to broil them or lightly sautee them in extra virgin olive oil and serve them over steamed veggies...squash, broccoli, carrotts, etc.  I usually have a very small salad on the side, too and do baked taters for the family!

By the time I am done with the scallops there is usully not too much room for anything else...but at least I try for a bite or two of yummy veggies!

Hmmm...all really good suggestions.  Perhaps I'll do sauteed spinach for me & scalloped potatoes & veggie for the guys.  Now I just have to figure out how many scallops to buy for 3 hungry guys & one puny eater...lol.  I'm thinking 21 total...6 for each of the guys, & 3 for me.  Does that sound right to ya'll?

You could try saute then in garlic and olive oil and putting them over Shiritake noodles - they are like pasta but are very low calorie for a large portion....... you can almost fool your brain into thinking it is pasta - I can......
