The Best Dinner Since Surgery...Thanks Shelly!!!!!

Hi guys!  With only being able to eat about 3 ounces of food, eating has been simple and relatively bland, but, last night, BAM and Yum!

I took one of Shelly's (AKA Eggface) recipes and made it lower in fat for me.  I made her Baked Ricotta.  Oh my go**** was soooooo good.

Here is her recipe with a few updates from me...

  Shelly's Baked Ricotta

8 oz of Ricotta Cheese – I used Fat Free
1/2 cup grated Parmesan – I used ¼ Cup
1 large Egg, beaten
1 teaspoon Italian Seasoning
salt & pepper to taste
1/2 cup Marinara Sauce
1/2 cup shredded Mozzarella Cheese – I use 2% Italian Cheese Mixture

Mix ricotta cheese, parmesan, beaten egg, seasonings together and place in a oven proof dish ( I used 3 small soufflé cups). Pour marinara on top and top with mozzarella cheese. Bake it in the oven @ 450 for about 20-25 minutes (best) or nuke it till hot and bubbly. I usually made it first in the oven and heated the leftovers in the microwave.
  

I did the math, about 18 grams of protein, about 200 calories, 8 grams of fat, and 6 grams of sugar…all estimates

I make this often.  My fam loves spagetti but I have never liked it (even preop) so I have this when they have that...usually once a week or every two weeks at least!  Glad you liked it!

Hey Sharon,
I tried that recipe and it was good.  I tried your recipe with the portabella mushroom, put onions, broccoli, sauce and cheese and made it into a pizza.  It was great.  We need to get together soon
