Hey Sharon. They have a reciepe forum here. I haven't tried these, but they look good. Here are some


PlZZA WHEELS 1 large egg, beaten
1 1/4lbs lean ground beef
Seasonings to taste (Pizza Seasoning, garlic powder, dehydrated onion flakes, red pepper flakes)
1/4 c. of starch (such as bread crumbs, crackers, crushed sugar-free cereal,... I used instant mashed potatoes)
1 small can of tomato sauce
Hormel Turkey Pepperoni
Hormel Real Bacon Pieces
Kraft Shredded Fat-Free Mozzerella Cheese


Beat egg, and fold in ground beef with seasoning, add 1/4 c. instant mashed potatoes or other starch. Make 5 equal size balls of ground beef and then flatten the middle and build up the sides so they are twice the height of the center... similiar to a wall around it or a pie crust.

Bake these for 20 minutes in a 350 degree, take them out of the oven and then season the tomato sauce with pizza seasoning and red pepper flakes and pour some in each cavity of the burger-wheels.

Cut the pepperonis into smaller pieces and place them on top of the sauce, add the bacon bits and cover them in Fatfree Mozzerella Cheese. Bake these for another 20 minutes or until a toothpick inserted in the side at the bottom comes out with clear juices.

Everyone in my family thought they were delicious!     Spaghetti Squash Lasagna

1 Medium spaghetti squash (2.5 lbs)

1 lb of ground sweet Italian sausage (turkey or pork)

1 1/2 cups of sliced fresh mushrooms

1 medium red pepper, chopped

1/2 of a medium onion, finely chopped (about 1/3 cup)

4 cloves of garlic, minced

1 tsp dried Italian seasoning

1 large jar of favorite prepared spaghetti sauce

1 package of shredded mozzarella

1/4 cup of shredded or grated fresh parmesan cheese

Pierce the whole spaghetti squash with a knife in several places, place it on a baking sheet and bake at 375 degrees for about 1 hour and 15 minutes.  Allow the squash to cool, then cut in half and scoop out the seeds and discard, then using a fork, pull the spaghetti-like flesh from the walls of the squash and set aside in a bowl.

Preheat the oven to 350 degrees.  In a large skillet, sauté the sausage, mushrooms, pepper, onion and garlic over medium-high heat until the sausage is no longer pink--ensuring you break up the sausage throughout.  Drain off any fat.

 Coat your lasagna pan with some sort of non-stick spray or lightly rub it with olive oil.  Spread half of the squash in the dish, add half of the sausage mixture, sprinkle with 1/2 tsp of the Italian seasoning. Top with half of your jar of sauce and half of the bag of mozzarella cheese.  Repeat with a second layer like this, except add the parmesan with the mozzarella on top.  Bake for 30 minutes.  Let stand 10 minutes before serving.

Creamy Broccoli and Cheddar Soup

Serves 6

3 tablespoons unsalted butter

1 large onion , chopped

2 cloves garlic , chopped

1 ½ pounds broccoli , stems peels and sliced into 1/2-inch pieces, florets chopped into 1/2-inch pieces

4 cups low-sodium chicken broth

1 cup half and half or milk

¼ teaspoon ground nutmeg

3 cups shredded mild cheddar cheese shredded

Salt  

1. Melt butter in large pot over medium heat. Add onion and coo****il soft, about 5 minutes. Add garlic and coo****il fragrant, about 1 minute. Add broccoli stems and coo****il bright green and just beginning to soften, about 5 minutes. Stir in broth, increase heat to medium-high, and simmer until stems are tender, about 5 minutes. Add florets, cream, and nutmeg and simmer until florets are tender, about 5 minutes.

2. Puree soup in two batches in blender until smooth, return to pot, and bring to simmer over medium heat. Stir in cheddar until melted and season with salt . (Reheat over medium heat until hot, but do not boil or cheese will separate.)

making this in my crock pot right now, I will have to let you know how it turns out...

2 cans of low sodium chicken broth
1 can of french onion soup
1 medium onion chopped
2 yellow summer squash- sliced
2 zuchinni -sliced
2 green peppers diced
chopped celery to taste- {I put in almost a whole bunch}
1/2 polksa keilbas- flavor your choice- sliced
simmer on low overnight
In the morning add..
1 can or bottle of marinara sauce your choice
diced pepperoni to taste
canadian bacon to tase
simmer til heated thouroughly
serve with shredded cheese of your choice
you can top with olives
fresh tomatoes or any pizza toppings you love

Shelly's Florentine Turkey Mini Meatloaf

1 Yellow Onion, diced
3 cloves Garlic, diced
1 - 16 oz. package frozen Chopped Spinach, cooked and drained thoroughly
1 1/4 pounds Ground Turkey, the average weight of 1 package
1/4 cup Italian Style Dry Bread Crumbs or some oatmeal and FlaxMeal
1/4 cup Milk
1 Egg, beaten
1 teaspoon Oregano or Spike
1/2 cup Tomato Basil Feta Cheese, crumbled
1/2 teaspoon Kosher Salt
a few twists of Black Pepper
Butter/Oil for sauteing

Cook and drain spinach thoroughly. Squeezing out any excess water with a clean kitchen towel. Set aside. Saute onions till golden, Add garlic and drained spinach cook 1 minute. Mix to combine. Set aside to cool.

Soak breadcrumbs in milk for 1 minute. Beat egg. Add egg, cheese and soaked breadcrumbs to ground turkey. Add cooled veggies and seasonings. Mix till combined.

Divide into 8 equal mounds. Form into mini meatloaves . Bake for 45 minutes in a 350 oven. These freeze well either cooked or uncooked.

My fav (especially for this time of year) is Taco Soup

1 lb lean ground beef and a medium onion, browned, drained and rinsed
add 2 packs of taco seasoning and 1 pack of hidden valley ranch dry seasoning and one cup of water, simmer (like you are making tacos)
reserve
in a large stock pot or crock pot add:
1 can each of:
dark red kidney beans
black beans
pinto beans
lg can crushed tomatoes
rotel tomatos
2 cans of shoepeg corn

add beef mixture and let simmer for at least 3 hours
...can be longer!  I have found that it is better the next day!
