I enjoyed our walk today, I hope that by next week I can do the whole lake, send me the cottage cheese pancakes

Here is the cottage cheese pancake recipe.......I got it from someone on this board

Cottage Cheese Pancakes
  In a Magic Bullet or small chopper, mix the following together:
1/2 cup low fat cottage cheese
1 egg or 1/4 cup egg substitute (I tried both and prefer the substitute)
2 tablespoons flour
2 tablespoons Splenda ( This was too sweet for me I had to cut back here)
1 teaspoon vanilla
dash salt

Spray and heat a griddle until hot. Spoon silver-dollar sized batter onto griddle and coo****il they start to bubble. Flip and cook on other side. The batter yields about 6 small  pancakes or 4 larger ones.

Topping Ideas:
melted SF apple butter
1/2 sliced banana
1/2 cup microwaved frozen strawberries blended in Magic Bullet
peanutbutter

This sounds great.
I am going to add to yours and I it is a wonderful and romantic "treat" ...a variation from the normal choc. covered strawberries......

cap 1quart of the largest fresh strawberries you can find
1 /4 cup of WHITE, dark or mild chocolate (that that is used for candy making)
red/gold or white doilies set up on a PRETTY large tray

cap and wash the strawberries and pat dry
set up on the tray covered with doilies
melt the chocolate in a container with a pointed pour spout
drizzle over the strawberries.

you get that little bit of chocolate fix and lots of compliments
