OK, I must be nuts, I still do not see the cottage cheese pancake recipe........grrr

Here is the Egg Drop Soup.  I made this by cutting the recipe in 4ths.  It was yummy.

Ingredients:
4 cups chicken broth
2 tablespoons green onions (chopped) - I skipped these
1/8 teaspoon ground ginger
¼ teaspoon salt
1 ½ tablespoons cornstarch
4 eggs
Lite Soy Sauce

Step 1: Reserve ¾ cup of the chicken broth (it will later be mixed with the cornstarch). Pour the rest of the broth into a sauce pan.
Step 2: Stir in ginger, salt, and green onions (I skipped the green onions) and a splash of lite soy sauce. Bring to a boil. While bring to a boil combine the corn starch with the reserve chicken broth and mix well. Set aside.
Step 3: In a bowl whisk eggs with a fork.  I added extra egg white to up the protein.
Step 4: Slowly drizzle the egg a little at a time with a fork into the boiling broth. The egg will cook right away. Stir immediately and in only one direction.
Step 5: Pour the cornstarch mixture into the broth and stir until its mixed well

Hi ya Tammy-kins & everybody!!  Ok, it's 1142 pm...I wonder if I can finish this post before midnight, thereby still getting in here while it's still Tuesday...lol.

I don't know anything about "psycho woman" but if you need prayers, then you got 'em!

Monday was busy, busy, busy.  To start with, Nino...our Italian Stallion...is having surgery this Friday.  Dr. Mo's new general surgeon is going to repair Nino's umbilical hernia.  We met with him early Monday morning.  Afterwards, I made a quick phone call to Heidi who then met us at World Market for a bit of shopping, followed by a quick haircut for me & Nino at the Hair Cuttery.  At noon we met up with a bunch of OH friends for lunch at Chili's...me, Matt, Nino, Heidi, Cindy, Melissa, & Lisa.  Courtney was expected also but as you saw, she had quite a difficult day & wasn't able to join us.  We had a lovely time, giggled a lot, grossed out the boys with some of our wl woes stories (lol).  By 2 pm, we were hugging & kissing good bye, each heading off in different directions.  I had to be at Winchester Medical Center for my quarterly cardiac check up.  All things considered, I'm doing as well as can be expected.  Interogation of my implant showed that I've had a couple of diverted shocks, & the doc upped one of my drugs, so now I don't see him again for another 3 months.

Today I had a sit down with my PCP to go over my bloodwork results.  He was rather pleased to see that my cholesterol levels have improved over the past 3 months & that my A1c is pretty near spot on.  I just love my PCP...he's sooooo pretty to look at...lol.

The rest of the day I've spent working on our taxes.  Had to put that task on hold until I can talk to our banker tomorrow though.  Lastly, I had a brief convo with Mike, who's in Tampa on business.  From the way he described his "suite", we're both wishing I could have gone with him.

And now here I sit, writing this while watching old Will & Grace, Frasier, Cash in the Atic, & I Love Lucy reruns.  Which explains why it is now 132 am!  I missed Tuesday!!!!
