Beef is a staple for me...steak and lean hamburger are favs! My hubby knows just how to cook it and it is perfect. I can't eat it any other way than medium rare or rare, otherwise it is too dry!

Today I am having carnitas left over from last night and fruit salad. Yummy!

What is a carnita?

My plans changed. I guess I ate the mini-Whole wheat bagel with peanut butter too fast. It got stuck and I had a mini-dump. That's never happened before!!! No tomato soup wanted.........

I will wait until 1 and then try drinking some more water. Still feel a little clogged up down there.

Carnita's are a mexican pork dish. It is the only way I can eat pork. It is moist and tender. Otherwise I get sick every time! When you make it to Richmond so we can meet...maybe we can go to my fav mexican joint and you can try them!
