Slippery slop and concerned....

I think we have all been there -- starting to broaden our horizons as far as food goes is a little frightening.
Like you, breads have been my concern because I find myself yearning for it. What I have done is allowed myself to have a flour tortilla every once in awhile, used in a mixed cheese quesadilla or a wrap sandwich. That seems to help with the desire for bread.
I started incorporating salads into my routine at about 6 months, maybe a little earlier. I try to get salads with chicken or some kind of protein on it, at a minimum, cheese. I get dressing on the side, dip my fork into the dressing then put some salad on the fork, that really minimizes the amount of dressing I eat.
Fruits -- I add them to my yogurt. I try to eat primarily berries (i.e., blackberries, blueberries -- they are high in antioxidants****asionally I will have some bananas, which are high in potassium, which is important.
Fiber -- There are a lot of good options out there for you -- to include multigrain cereals (i.e., Kashi Go Lean), and even some that are high in protein (you can get them from some of the sites online). The nice thing about them is that you can get in the "good carbs," fiber, and if you are like me, get some of that need for crunchy stuff taken care of.
I make sure I get dairy in during the day, primarily through yogurt, but occasionally with drinking some skim milk, and definitely through cheese. There are so many choices out there -- we just have to make sure we focus, as you know, on the protein content. The more the better.
You have done so great so far, and will continue to. Speaking for myself, I found at about 6 months out my tastes started to change, and I was more comfortable trying some new foods, amounts, etc. You may be at that point as well.
