Well...Thanksgiving is only 24 days away, which means....in 24 days, the foodfest will begin.
For many, this is a really tough time of the year to stay focused. Dreams of sugar plums dancing in our head, wake us in a cold sweat.
BUT...there is hope. We CAN enjoy some of the yummy treats that we grew up with - provided that we "tweak" the recipes. So, with that in mind.....this week's secret ingredient is the......
MOCK POTATO
Post your favorite mock potato recipes, or a recipe that uses a mock potato.
What is a mock potato you ask? Anything that replaces the potato, while making you "think" you have potato.
Here are the rules:
1. You must give credit where credit is due. If it's your own original, say so, but if it's someone elses, please give credit.
2. Tell us why you like the recipe.
3. Must be weightloss friendly.
Here's mine:
Jill's Loaded Mock Potato (This is my recipe)
2 cups of cooked cauliflower
1/4 cup Skim Milk or FF Half & Half
1 tsp. Butter (I use the real stuff)
1/4 chopped Scallions
3 slices Turkey Bacon
1/2 cup 2% Shredded Cheddar Cheese
Salt/Pepper to taste
Cut cauliflower into pieces, steam in microwave for about 10 - 12 minutes until soft. Dry with a clean kitchen towel to remove excess moisture. Place cauliflower in food processor and process until mushy (not soupy). Put mixture into a pot, over med low heat, add milk (or half & half), butter, chopped scallions, turkey bacon, and cheese. Fold to mix. Coo****il cheese is melted. Serve. **Note: all ingredients can be adjusted to your own taste and the texture of your cauliflower (if there is too much moisture in it or not). I add the liquids in slowly to ensure that I don't get runny "potatoes".
Variation: Instead of cooking over stove top, mix all ingredients in a bowl and place into a buttered casserole dish. Bake 350 until brown and cheese melted.
Jill's Thanksgiving Mashed Mock Potatoes.
Ok...this one is not only for Thanksgiving, but it is mine. I especially love this recipe during the winter when we typically have comfort food like meatloaf, potatoes, gravy and veggies.
2 cups of cauliflower
1/4 cup skim milk (or FF half and half)
1 tsp butter
Salt/Pepper to taste
Cut cauliflower into pieces, steam in microwave for about 10 - 12 minutes until soft. Dry with a clean kitchen towel to remove excess moisture. Place cauliflower, milk, butter and salt/pepper in food processor and process until mushy (not soupy). Serve. **Note: all ingredients can be adjusted to your own taste and the texture of your cauliflower (if there is too much moisture in it or not). I add the liquids in slowly to ensure that I don't get runny "potatoes". But, I will be taking a small container of this to my sister's house for my Thanksgiving dinner. A splash of gravy and I'm good!
Couscous/Rice
1 head of cauliflower, remove the green parts. Cut into bite size pieces. Place raw cauliflower in food processor and pulse until a grainy texture. Heat in either a fry pan with a little bit of liquid, or in the microwave. Great for stir-fry or curry. You can add meat, scrambled egg and a bit of fried rice seasoning to make a mock fried rice.

I do use the cauliflower one...but I have no measurements. I make it just like I do mashed potato's and I never measure those, either!

Sorry, I don't mock potatoes, so no recipes. Don't really miss them.
The only "mock" I do use is bean sprouts for rice. Instead of putting stir fry over rice, I put it over bean sprouts. I know, boring! The only inventiveness I use with cooking is loading on the garlic and spices. I don't seem to need the variety like I did before.
