This is my altered version of a Apple Peach Crisp from Kraft Foods.com
Prep Time:
15 min
Total Time:
45 min
Makes:
9 servings
What You Need
2 cans (15 oz. each) sliced peaches in splenda or extra light syrup (drained)
3 medium apples, chopped (about 3 cups)
1/2 cup Splenda
2 tsp. cornstarch 40 Sugar Free Murrays NILLA Wafers, coarsely crushed (about 1-1/2 cups crumbs)
*or you can make a great topping out of Almond Honey Bunches of Oats and don't use the walnuts*
3/4 cup Walnut Pieces
3 Tbsp. I Can't Believe Its Not Butter, melted
Make It
PREHEAT oven to 350°F. Toss peaches with apples in large bowl. Mix Splenda and cornstarch. Add to fruit mixture; toss to coat. Spoon into lightly greased 9-inch square baking pan.
MIX wafer crumbs, walnuts and butter; sprinkle over fruit mixture.
BAKE 30 min. or until topping is browned and fruit is hot and bubbly. Cool slightly.
Another tip to crushing the wafers. I stuck mine in a gallon ziplock bag and ran it over with a rolling pin, it works wonders.
1 small apple, sliced
Vanilla extract
Cinnamon
1 tbsp. Grape Nuts, Kashi Go Lean or another "crunchy" and low sugar cereal
1 c. Greek Yogurt (for the protein)
Place apple slices on a paper towel. Lightly drizzle with vanilla extract and sprinkle with cinnamon. Microwave on high 45 sec to 1 min, or until desired tenderness. Mix apple slices with cereal and yogurt...add Splenda to taste.
I love this recipe because I love the combination of the sweetness of the apple, the tartness of the yogurt, and the crunch of the cereal. This is AWESOME for breakfast on a cold day!
Enjoy
Apple, cored and sliced
Handful of baby carrots
Caraway seeds to taste (if you aren't sure, try 1/4 teaspoon and work from there)
Optional:
If you like sweeter, you can add a touch of honey or brown sugar.
If you like a touch of savory, you could add a minced shallot.
Spray foil with no-stick
Add ingredients
Close foil packet and bake at 350 for about 45 minutes
Use the back of a fork to roughly mash the carrots and apple together.
