All-Natural Recipe Swap
Each week, there will be a new ingredient (Fall related), and we will swap recipes using that ingredient. Breakfast, lunch, dinner, whatever.
There are 4 rules:
1 - it MUST have the ingredient in the recipe
2 - it must be a healthy, recipe
3 - if it is not your own creation, then give credit where it's due
4 - tell us why you enjoy this recipe
So, this week, the secret ingredient is......................APPLES. Give me a recipe using apples.
Here's mine:
Fried Apples
I made up this recipe the other night and serves it with pork chops and collard greens. I had a taste of them and they were good. Reminded me of my Mom's fried apples. Serves with pork was a nice side, but you can add this to lots of different things, top on cottage cheese pancakes, add a small dollop of sugar free whipped cream for a ymmy dessert, etc.
Here goes:
3 large (Costco size) apples, peeled, cored and sliced.
1 tbsp butter (I use the real stuff)
Melt butter over med low heat in a fry pan. Add apples. Leave apples alone in the pan for at least 1 minute. You want them to fry and get carmelized. Then turn over.
Sprinkle 1 tbsp of Splenda (or to taste) and 1 tsp of Apple Pie Spice (or to taste).
Continue to saute the apples until tender and crisy (not burnt).
Ok....here's another one. I dont make it often, but my guys really like this one.
1 Pgk of Emerils Chicken/Apple Sausage
1 large Yellow Onion
1/2 Tbsp Butter
2 Large Apples, peeled/cored and sliced
in fry pan, melt butter over med low heat. Add sausage to brown. Add onion and apple, saute until tender and serve. I serve with a side of green beans.

Made this one up myself based on a sandwich served at a Dean & DeLuca's in NYC a looong time ago.
Why do I like it - ummm...easy and it combines protein with FRUIT!
Peel and slice an apple.
Pick a flavor of SF Kool Aid and empty the contents into a zip lock bag.
Add apple slices (just a two or three at a time), close bag and shake
Enjoy!
If you use Cherry then they taste similar to a candied apple like we used to get at the fair!

I absolutely cannot do the peelings on apples post-op but I HEART apples!
Apple Mud (self created for myself and the buggas)
2-3 apples (any size works)
3 tablespoons of peanut butter (I'm strictly a Peter Pan gal)
1 teaspoon of honey (I use natural honey - pure - bought locally)
A couple pinches of cinnamon
Mix the peanut butter, honey & cinnamon together in a small bowl
Peel the apples and cut them into sticks
DIP AWAY!!!!!!
