That's right Four very low carb additions to my other recipes designed to make sure you've got the tastiest stuff you can have without any of the guilt. We can't eat much so why not make it super tasty and high quality?

They look great but why such huge servings? 6 chicken breasts in one recipe...I'd be eating that for 2 weeks! Any chance you can downsize??

the reason some of the servings are so big is because I cook for the people who stay at the villas that I own in the Virgin Islands, and there's normally 5 or six people in each of my villas...so I'm just used to making it big... then I charge them about 100 bucks a plate and thank them and I go to my villa and eat a salad and some miso soup...lol
So some are portioned for small meals and some are big... but all are made with the idea that I never want to make something that you can just buy anywhere... So I get big stars that stay at my place and i get people who never want the fame.... those are my favorite kinda people...
Most of the time, my recipes aren't large enough because I get 10-12 people on the catamaran and then it's a nightmare keeping everything in order... Life is good though...I can't gripe...

I'm looking forward to checking out the new recipes. The portions work for me cuz I'm cooking for a family of 3 (actually 4, cuz hubby gets dinner left overs for lunch the next day.). Plus, I have a FoodSaver machine & have no problems freezing stuff.
Christina, that's what you could do, honey. Go to Walmart or Target & buy a food saver. Then you could cook up T's dishes & freeze single-portions. I LOVE my food saver, or my sucker machine, as I call it. They need to pay me for all the endorsements I give about this machine. I'm on my 4th one cuz I keep wearing them out! But I've had one in my house for the past 10 years or so.
