Meatball recipe for my wedding.

Okie dokie gals I need your help I have meatballs to be served @ my reception and I want to have 1/2 of them to be WLS friendly so Id like to have a recipe or several to selct from so anyone who might have one they would like to share I would be very greatful. Hope everyone has a great day.

Melinda - give these a whirl - they are baked not fried. Because the meatballs are baked and not fried, they won't fall apart when turned over.

Ingredients

1 1/2 pounds ground round 1/4 cup (1 ounce) finely shredded fresh Parmesan cheese 1/2 cup dry breadcrumbs 1/3 cup chopped fresh parsley 1/4 cup tomato sauce 1 teaspoon dry mustard 3/4 teaspoon dried Italian seasoning 1/4 teaspoon salt 1/4 teaspoon crushed red pepper 2 garlic cloves, crushed Cooking spray

Preparation

Preheat oven to 400°.

Combine all ingredients except cooking spray in a bowl; stir well. Shape mixture into 30 (1 1/2-inch) meatballs. Place on a broiler pan coated with cooking spray. Bake at 400° for 15 minutes or until done.

Yield

30 meatballs (serving size: 5 meatballs TURKEY

For moister, more flavorful meatballs, use ground turkey that contains light and dark meat rather than just breast meat.

Preparation

Preheat oven to 400°.

Combine all ingredients except cooking spray in a bowl; stir well. Shape mixture into 30 (1 1/2-inch) meatballs. Place on a broiler pan coated with cooking spray. Bake at 400° for 15 minutes or until done.

aww thanks. some of it, though, is from my appointment with him in march, the first re-visit with him after i was released from the hospital. 47 of it though, is from surgery date, 7 weeks ago. Although, I have hit a stall, I think. Or a slow down. Only lost 1.5 lb since last Wednesday. That's why I was questioning the calories. But thanks for noticing. You are rocking it too!
